2 small baguettes or 1 cut in two pieces
2 Moutevelis Mykonos sausages
100 gr feta cheese, crumbled
2 big tomatoes
½ bunch of parsley
60 ml of olive oil
Salt (to taste)
Freshly ground pepper
On a cutting board cut into small cubes the tomatoes, the cucumber, the zucchini and the carrot
Chop the parsley and the scallions.
In a large bowl, add and mix thoroughly all the previous ingredients. Add the olive oil, season with flour de sel and freshly ground pepper.
Heat a non-stick pan over high heat and cook the Mykonos sausages for 3-4 minutes until they get a nice color and you can smell all of the sausages’ aromas.
On a cutting board, cut a deep V shape through the top of the baguette to create the hole for the veggies and sausages. Remove the piece, including the soft crumb.
Fill the baguette with the finely chopped vegetables, sprinkle the crumbled feta cheese, and place the Mykonos sausages on top.
